The reason for that move is that White's board is already set up for an optimal mating strategy. There is no need to disturb the harmony of the pieces; only the King should move. (a-c)5 is invalid and, a5 is not a good move (black queen can kill the rook and make a check), (b-c)7 and c6 are inefficient (similar reason to a5).

what if the queen DIDNT eat the ROOK(Queen F5 to F1) instead ,moving the Black Horse H8 to F7, "no Mate" in two moves

we are talking of two moves mate here.....remember human mind is not as fluent as computer mind or vice versa

Incorrect. Suboptimal solution for black if the Black Queen didn't eat the White Rook.
If he does that, pawn will just move e6 to e7 and mate all the same.

Clue: You can still castle even if it's counterintuitive.
Clue 2: At least 2 paths for mating in 2 moves.
