
Mango Sago with ice cream
1 cup pureed mangoes, chilled or 1 cup mango concentrate juice
2 pieces of mango, cut in cubes
1 cup of cooked small sago pearls
1 cup evaporated low fat milk
1 scoop ice cream, any flavor
To cook sago pearls, boil a large pot of water. Pour sago pearls slowly into the pot and cook until the pearls are transparent, stirring it consistenly. If water runs low, add more water to pot.
Mix all ingredients, except the ice cream, in a large container. If you like it sweeter, you can add some sugar. You can adjust the consistency by adding more water, or more juice or more mango. Whatever, however you like it. Top with ice cream when serving. Enjoy!
